Shakshuka (Libyan-Style Poached Eggs in Tomato Sauce)
Shakshuka is a simple yet flavourful dish of eggs poached in a rich, spicy tomato sauce. This dish is popular in Libya for breakfast or brunch, served with warm bread.
Ingredients:
- 4 eggs
- 2 large tomatoes (chopped)
- 1 large onion (chopped)
- 1 red bell pepper (sliced)
- 2 garlic cloves (minced)
- 1 tablespoon tomato paste
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon chili flakes (optional, for heat)
- Salt and pepper to taste
- Olive oil for cooking
- Fresh parsley for garnish
- Warm bread for serving

Prepare the Tomato Sauce: In a large skillet, heat olive oil over medium heat. Add the onions and sauté until soft and translucent. Add the garlic and bell pepper, and cook for another 5 minutes.

Add Tomatoes and Spices: Stir in the chopped tomatoes, tomato paste, cumin, paprika, and chili flakes (if using). Season with salt and pepper, and simmer for 10-15 minutes, until the sauce thickens slightly.

Poach the Eggs: Make small wells in the tomato mixture with a spoon, then gently crack the eggs into the wells. Cover the skillet with a lid and cook until the eggs are just set, about 5-7 minutes.

Serve: Garnish the shakshuka with fresh parsley and serve hot with warm bread for dipping.
